There is no one diet that is best for every person! Different people in different places at different stages of life will eat different things. However, we can say that there are a few principles that are generally true for most people, and this is what we emphasize in our Health Jumpstart course as we educate about a plant-based approach.
First, almost no one recommends eating processed foods. So this is number one. Even different groups that seem to be at war over what a person should eat will generally agree on this. I believe many diseases would go away if we simply eliminated processed foods.
Second, for most people, eating plenty of fruits and vegetables in variety is very helpful. These two steps alone would tremendously decrease the burden of disease. From there, Nutrition can be further customized. Add to this Nutrition of the mind, Movement, Connection, and Rest, and we do have a recipe for healing on a massive scale on this planet. Each of these Four Engines have a role. It is not only what we eat.
It's also important to keep in mind that if you start a diet and you feel consistently worse (as opposed to a transitional period where a person could feel worse due to the body and mind not getting what they are used to), that diet is probably not for you.
Regarding the reversal of heart disease, there are plenty of studies showing how a plant-based diet is effective at stopping and even reversing heart disease. See some of the studies by Dr. Esselstyn and Dr. Ornish. Watch this interview with Dr. Esselstyn. Does this mean it is impossible in any other way? I don't think so, but these is strong evidence for a plant-based diet. Again, it begins with eliminating processed foods and eating plenty of vegetables and fruits.
In the future, I think we will see more and more diseases be healed in this way.
